We did it! We booked and went on our spring trip all within like 6 weeks! It wasn’t really that much to plan. We knew we wanted to sample the flower and garden goodies, have a swim day at Saratoga Springs, and then ride Guardians. That’s about it!
We booked a tower King room at the Coronado Springs resort for $250 a night. This is such a gorgeous resort! I can’t believe how reasonable their rates are! We loved our room… well, except for the weird bathroom layout. The shower was with the sinks, and the commode had a separate door, but they were also all in one door. So, you couldn’t use the sink or the commode if someone was taking a shower. It would up being totally fine for just the two of us.
We arrived Tuesday around 6:30, rented a car and went with our friends straight to Saratoga Springs where they were staying. We were ready for dinner, so we ate at the quick service, Artists Pallette. A and I shared a roast chicken dinner with mashed potatoes and roasted cauliflower. I’m to even kidding you when I say that this was the best chicken I think I’ve ever had. It was so moist and flavorful! Even the chicken breast was so soft and wonderful. We must have timed it just right, because I’ve had some pretty dry chicken in the bubble before! The masked potatoes were fresh and made from real potatoes with skins in them. A didn’t like them because she said they taste like yogurt. SO, I’m guessing they had sour cream in them or maybe yogurt… but I loved them. The roasted cauliflower was also well seasoned and delicious! A wonderful meal all around!
We then went to Magic Kingdom. We didn’t have any Lightening Lanes, it was like 8:00 by the time we got there, so lines were dwindling as people started to line up for the parade and fireworks. We went to Tomorrowland first and the girls rode Tomorrowland Speedway. Now that DD is learning how to drive, she sees how difficult those cars are to maneuver! lol
We went over to Haunted Mansion after that and literally walked right into the stretch room. After that we stopped at Aloha Isle and grabbed the Tropical Serenade. Oh my goodness! That was delicious! We usually just get the coconut dole whip, but we wanted to try something a little different.

We rode Pirates, also with maybe a 5 min wait. These second tier rides are perfect for riding during parades and fireworks! After all of that the park closed at 10pm and we walked back to our car and our friends dropped us off at Coronado Springs.
DD and I checked in, dropped out bags off in our room, and then high tailed it to EL Mercado de Coronado fro a little night time snack. We grabbed some garlic knots and yogurt. A weird combo to be sure, but I never question our snack choices after a long day at Disney. The body wants what the body wants! We barely made the closing time… I think we were checking out at 10:50!
We went back to our room, snacked a bit, unpacked and got ready for bed. It was a long, fun, and amazing day!
